Pastinaca sativa
Plante-racine bisannuelle de saison froide appartenant à la famille des Apiacées (carottes), cultivée comme annuelle pour sa racine pivotante charnue et sucrée. Originaire d'Eurasie et largement naturalisée en Amérique du Nord, elle forme une rosette de grandes feuilles composées la première année et — si on la laisse une deuxième année — dresse de hautes tiges surmontées d'ombelles plates de petites fleurs jaunes. La racine devient plus sucrée après un gel intense, mais toutes les parties de la plante contiennent des furanocoumarines : la sève en contact avec la peau nue au soleil provoque de graves brûlures phototoxiques.
