Brassica oleracea (Acephala Group)
Un légume feuille de saison fraîche, proche du chou, cultivé pour ses larges feuilles coriaces bleu-vert qui poussent en rosette dressée ouverte sur une tige épaisse — sans jamais former de pomme (« acephala » signifie sans tête en grec). Bisannuelle presque toujours cultivée comme annuelle, ses feuilles se sucrent après la première gelée d'automne et, dans les régions à hivers doux, continuent de produire tout l'hiver jusqu'à la montée en graines au printemps. L'un des légumes de la famille du chou les plus résistants au froid.
