Anthriscus cerefolium
Una hierba culinaria anual de temporada fresca, de textura fina y crecimiento rápido, en la familia de la zanahoria (Apiaceae), nativa de Oriente Medio, Rusia y el Cáucaso y cultivada hoy en todo el mundo. NC State Extension describe una planta erecta y extendida de aproximadamente 1-2 feet de altura con hojas verde claro, plumosas y finamente divididas (tripinnadas) — como un perejil más delicado — y un suave aroma anisado. Pequeñas flores blancas de cinco pétalos se abren en umbelas en forma de platillo de 1-2 inches de diámetro en primavera y verano. Generalmente se cultiva como anual (ocasionalmente bienal en zonas más cálidas), prefiere el clima fresco en suelo húmedo y bien drenado, y es un componente clásico de las fines herbes francesas, apreciado por su delicado sabor que resulta mejor en fresco.
